Go back in time to the downright dirty history of the American speakeasy and you’ll find Angostura Orange bitters in a huge number of different drinks. A classic example of bitters, one of the few that survived US Prohibition, flavours of orange and geranium are most prominent followed by spicy cardamom and coriander. An original family recipe lives on in Hayman’s Old Tom. Clean and fresh in its flavours with a history dating back to the 1860s, Old Tom uses the same ten botanicals it always has. Nose: The first hints of fresh almond and harvest aromas immediately open up into preserved lemon and dried fruits, the whole rounded off by darker smoky and toasted qualities. Palate: The presence of the wine on the palate is immediately captivating. Paradoxically concentrated yet creamy, it is energetic and warm in the mouth, focusing on the fruit, then gradually taking on more profound bass notes. The whole holds its note perfectly, intensively, with just a subtle, elegant hint of underlying bitterness.
