Marsala is made on the Italian island of Sicily, around the coastal town of Marsala. It is made from the local grape varieties Catarratto, Grillo and Inzolia, fermented to dryness like sherry, then fortified.

Wild Turkey 101 has been aged for eight years at a much higher proof than they’re traditional bourbon. This delivers a more intense, alcohol-heavy nose but also a deeper, more complex flavour. You wouldn’t know it from the nose as it’s light and unassuming but once you sip you’ll taste the depth of sweetness within this bourbon alongside the toasty alcohol burn. Pepper, caramel and honey are stand out flavours in this intense bourbon and it’s certainly one to remember.
A medium-rich, boal-style Madeira from highly regarded producer Henriques & Henriques. This is aged for five years and is rich with notes of figs and honey.
Lemon and vanilla cake notes on entry followed by a tannic vaniilla wave that moves through into a spicy custard and bsicuit notes. Citrus rind and crème anglais finish with a sweey yet firm kick at the end. Best served from the freezer. Fantastic with apple juice and freshly pressed lemonade.
