Semillon and Sauvignon Blanc fruit from vineyards in Riverina was carefully selected for quality and character. All juice was fermented cool to retain intense varietal characters. Wine was left on fine lees for a 4 month period before blending and bottling to maximise the flavours and character.

Made from the Cortese grape variety, grown in vineyards with a cool mesoclimate; these are generally north facing and up to about 350 metres above sea level. The wine gets its name from the town of Gavi, situated in the south-east of Piemonte, around which the vineyards are planted. The wine is fermented in stainless steel and aged briefly on its fine lees. It shows white flower and green fruit aromas, with a touch of honey and minerality on the palate.

A famous appellation from the Côte de Nuits, known as much for its size as for its great wines, Gevrey-Chambertin boasts a wide diversity of terroirs. There is no white wine here, only Pinot Noir is cultivated.
The nose features aromas of ripe red and black fruit against a backdrop of spicy, woody notes. Further years of ageing will bring forward animal notes of musk and fur. Full-flavoured and velvety, this wine is silky, robust, tannic and well balanced. A long, beautiful finish that echoes the first nose.finish.
The wines of this vineyard area are world-renown and this is a wine that may well be the perfect introduction to the joys of fine white Burgundy. Thirty five percent of the wine is aged in new oak imparting smoke and toast to complement the honeyed and stone fruit characteristics on the palate. It is a rich and ripe wine with considerable length on the palate. Although it is a fine wine we think that the purity and intensity of the fruit characteristics are what make this wine most charming and would advise drinking within ten years of the vintage.

Vineyard Notes
The grapes, selected from low yielding vines, come from the areas of Carcassonne and the Minervois, in association with Celliers Jean d'Alibert.
Winemaking Notes
The two varieties were vinified separately. Both went through a period of cold soak. fermentation on skins lasted 2 weeks prior to pressing. There was very limited use of press wine.
Tasting Notes
The blend of rich blackcurranty Cabernet and brambley, gently peppery Syrah makes this a very distinctive wine. The vanilla character of the oak is present but subtle, and the tannins are softer than in many Cabernets. A very luxurious drink; silky and satisfying.
Food Style
Good with a range of red meat dishes, but its soft fruity character makes this an attractive wine to drink by itself.
Vineyard Notes
We have selected vineyards in the area of Carcassonne and the Minervois based on grape flavour and yield. The wines are produced and bottled in association with Celliers Jean d'Alibert.
Winemaking Notes
The grapes were cold macerated then pressed, cold settled before fermentation. 30% of the Chardonnay was fermented in French and American oak barrels, and remained on lees in barrel, with some stirring, for six months.
Tasting Notes
Chardonnays come in many styles, from light and minerally to rich, buttery and oaky. We wanted to make a Chardonnay that was satisfying, yet fresh, and with a sufficiently interesting flavour to capture the imagination. From the outset, it was crucial that it would be a great accompaniment to food. This is a fresh, pine-appley wine, with a subtle hint of oak and a touch of mango and ginger
