Remy Martin VSOP Mature Cask benefits from a precise maturation process which involves placing the eaux de vie in specially selected Limousin oak casks that are more than 20 years old. These casks allow the fruity notes of the blend to be enhanced further and it’s a wonderful cognac which can be enjoyed over ice or as a key flavour in a sophisticated cocktail. Apricot and peach take centre stage with notes of rose and sweet vanilla following after.
Don Julio Anejo 1942 spends up to two and half year ageing, nearly enough to be classed as extra anejo. It’s stilled in a single pot still and has the wonderful spiced aromas of cinnamon, sweet agave, vanilla and interesting Turkish delight. The taste is deep with cinder toffee notes, the continual flavour of the agave and bursts of sweet, zesty citrus. Dry and nutty the finish is long with notes of smoke.
Another market leading cognac, Hennessy’s rich and full-bodied flavours strike a special balance which makes it so popular. Bright and fruity from first opening, Hennessy also has undertones of oak and once in the mouth flavours of nutty grilled almonds and a hint of fresh grapes are released. Tones of red berries and vanilla follow and ageing of a minimum of 2 years helps bolster the intense smoothness of the drink.
Nose: The first hints of fresh almond and harvest aromas immediately open up into preserved lemon and dried fruits, the whole rounded off by darker smoky and toasted qualities. Palate: The presence of the wine on the palate is immediately captivating. Paradoxically concentrated yet creamy, it is energetic and warm in the mouth, focusing on the fruit, then gradually taking on more profound bass notes.
