Four Pillars Rare Dry Gin is made in a small distillery in Yarra Valley, Australia. Everything the Four Pillars distillers make is based around their four pillars - the still, the water, the botanicals and love. It's sort of a bit like the four elements of hip hop. Pillar 1 - The Four Pillars copper-pot still is called Wilma. Pillar 2 - The water they use from Yarra Valley is triple filtered. Pillar 3 - They use some local botanicals (Tasmanian pepperberry, lemon myrtle), some exotic botanicals (cinnamon, cardamom, coriander seeds and star anise) and some classic botanicals (juniper, lavender, angelica root), as well as whole oranges to give Four Pillars Gin its flavour profile. Pillar 4 - The distillers love what they do and love what they have made. It all adds up to a vibrant Australian gin which stands out in cocktails, but tastes just superb neat.

The folks behind the marvellous Ancho Reyes Chile Liqueur have only gone and create a green chile variant! One of the rare 100% pot still rums out there, Smith & Cross is a Jamaican favourite which allows tropical fruity flavours to define its character. A hit of pineapple is your first hint at the flavours within and the nose develops with further spicier notes of clove, pepper and intriguing hot chilli. On tasting you’ll enjoy a warm, buttery opening which bursts into a fiery chilli-based heat, peppered with cinnamon and clove. This heat is tempered by balancing vanilla and muscovado sugar notes, bringing Smith & Cross to a mellower end note.

An 80:20 blend of pot still to column still rums is used to deliver the quality taste of Diplomatico Reserva Exclusiva. Aged for up to 12 years this exclusive rum is a heady concoction with sandalwood and fresh leather aromas that lead to a deep and bitter flavour. The bitterness comes through in deep coffee notes but they are matched by sweet honey and plum flavours which add a lightness to this intense rum.

This classic 12 year old Aberfeldy is a traditional single malt Scotch, distilled up in the Highlands. Rich and malty in character, aromas of cooked cherries, sherry and a light hint of smoke come through first. The flavour is wonderfully sweet with a clean mouth feel and malty notes coming through consistently. Gentle peaty depth reminds you of the quality of this malt and peters off to a gentle finish.

Copper pot still whisky

Herradura Plata is a smooth silver tequila, aged for just 45 days and offering up a welcome cleanliness on the palate. The ageing means that there’s a hint of oak in the flavour but its key note are refreshing agave which is enhanced by tangy citrus. The strength of the agave flavour makes this a fantastic choice for your next margarita and the light heat underlying the key flavours is a wonderful reminder of the quality of this tequila.

Planteray O.F.T.D (Old Fashioned Traditional Dark) is a high-strength blend of rums from Barbados, Guyana and Jamaica. Rich and warming with notes of spice, coffee, orange and clove, this is excellent in cocktails. LABEL MAY VARY.

The 54% is hidden in the chocolate notes, which brings warmth to this 12-year-old Panama rum. Nose: Heavy dark chocolate, hot cream, and touches of citrus. Each barrel is hand selected to ensure the flavour is absolutely perfect before bottling. The nose is rich with toasted oak notes as well as warm corn and cereal-inspired sweetness. There’s a note of smoke in there which is brought out strongly in the flavour and teams beautifully with nut oils and a spicy aniseed depth.
