Thin Lizzy members Scott Gorham and Brian Downey, together with Philip Lynott’s family Caroline, Sarah and Cathleen immersed themselves over a 2 year period in a bold collaboration with West Cork Distillers to co-create an Irish Whiskey where craft and art combine. Committed and uncompromising in their approach, after many tastings they personally selected an unusual blend of grain and malt Irish Whiskies finished in double charred oak casks for their Thin Lizzy Irish Whiskey.

One of the rare 100% pot still rums out there, Smith & Cross is a Jamaican favourite which allows tropical fruity flavours to define its character. A hit of pineapple is your first hint at the flavours within and the nose develops with further spicier notes of clove, pepper and intriguing hot chilli. On tasting you’ll enjoy a warm, buttery opening which bursts into a fiery chilli-based heat, peppered with cinnamon and clove. This heat is tempered by balancing vanilla and muscovado sugar notes, bringing Smith & Cross to a mellower end note.

An 80:20 blend of pot still to column still rums is used to deliver the quality taste of Diplomatico Reserva Exclusiva. Aged for up to 12 years this exclusive rum is a heady concoction with sandalwood and fresh leather aromas that lead to a deep and bitter flavour. The bitterness comes through in deep coffee notes but they are matched by sweet honey and plum flavours which add a lightness to this intense rum.

This classic 12 year old Aberfeldy is a traditional single malt Scotch, distilled up in the Highlands. Rich and malty in character, aromas of cooked cherries, sherry and a light hint of smoke come through first. The flavour is wonderfully sweet with a clean mouth feel and malty notes coming through consistently. Gentle peaty depth reminds you of the quality of this malt and peters off to a gentle finish.

The tiny Isle of Arran was once rife with working distilleries but many of them lucked out when the market became swayed towards quantity rather than quality. Many distilleries fell into disuse until 1995 when a distillery in Lochranza reopened it’s doors to become home to the Isle of Arran Distillers. Then in July 1998, the first legal dram of whisky was served for over 160 years. The 10 year old single malt is a medium-bodied, whisky with a nose of herbaceous hedgerow and biscuits with a sweet, malty palate followed by green fruits and apples.

A spicy, smoky Mexican liqueur made with chile ancho, which are dried poblano chiles. These little beauties are macerated in neutral cane spirit for half a year, then blended with a selection of other ingredients and allowed to rest a little longer for the flavoured to marry. Sure to make for a top cocktail ingredient...

In order to capture nature’s freshness, they invented their unbelievably cold distillation process. The result is a flavour you just can’t replicate in traditional heated stills. It allows them to use fresh frozen citrus peel, instead of the typical dried peel. So that inside each of their individually numbered bottles is a bright, distinct and sippable gin.

Four Pillars Rare Dry Gin is made in a small distillery in Yarra Valley, Australia. Everything the Four Pillars distillers make is based around their four pillars - the still, the water, the botanicals and love. It's sort of a bit like the four elements of hip hop. Pillar 1 - The Four Pillars copper-pot still is called Wilma. Pillar 2 - The water they use from Yarra Valley is triple filtered. Pillar 3 - They use some local botanicals (Tasmanian pepperberry, lemon myrtle), some exotic botanicals (cinnamon, cardamom, coriander seeds and star anise) and some classic botanicals (juniper, lavender, angelica root), as well as whole oranges to give Four Pillars Gin its flavour profile. Pillar 4 - The distillers love what they do and love what they have made. It all adds up to a vibrant Australian gin which stands out in cocktails, but tastes just superb neat.

Père Magloire 12 year old AOC is a single distillation Calvados which is fine and silky on the palate. Its deep golden brown colour is attributed to a minimum of 12 years maturation in oak barrels and this also adds a distinct addition to the flavour profile of the bottle. Fresh hazelnut marries with fruity banana and natural spices all coming together with the baked apple flavour which is typical of a quality Calvados.

Pusser's 'Gunpowder Proof' Black Label (previously known as Blue Label) is a higher proof traditional British Naval rum, produced using the blending recipe from the Admiralty. Well loved, it picked up a Trophy at the International Spirits Challenge 2016.

A classic from the Isle of Skye and a critically acclaimed offering, Talisker 10 Year Old is a tangy and tasty malt. The nose is bitingly sharp with thick pungent smoke. Apple peels and light fragrant notes help to mellow the sharpness which is how the flavour is dominated with smoke, peppery peat and real intensity. The long finish is welcomingly sweet, with barley and malt, mellows the intense peaty and smoke.

A Spanish gin which shouldn’t be discounted because of its Mediterranean roots. Super premium and inspired by the natural botanicals of its home region, Gin Mare benefits from the individual distillation of botanicals which are then hand blended to create its distinct and enjoyable character. The unusual flavours of basil, thyme, Arbequina olive and rosemary sit alongside the traditional flavours we all know and love.

The clue’s in the name – Very Junipery Over Proof, Sipsmith’s have created a juniper lover’s dream. Firmly in the driving seat of this aromatic gin is juniper, its pine-driven aroma released on opening and mingling with cedar wood. The taste too is very heavy on the juniper with rich spices supporting and even notes of dark chocolate. The heavy juniper flavour tapers off to a fine balance in the end which is long, dry and ultimately satisfying.

Ron Matusalem went and sourced some wine casks for this limited edition release! The rum is charcoal filtered and matured in a solera system, before it's finished in casks which previously held Tempranillo wine. The tropical notes from the rum work wonderfully with the spicier notes from the wine cask, with just 8,000 bottles released. Rather snazzy bottle there, too.

A bold, flavour-forward Texan pot still bourbon from Balcones, matured in charred oak casks, creating aromas of honeycrisp apples, toasted oak, popcorn, savoury crackers and well-oiled leather that fill the nose. The palate offers notes of honey, vanilla cream, roasted pecans, sandalwood and leather that linger in the finish.

Whisky from both Pedro Ximenez Oloroso seasoned casks and refill ex-bourbon casks have been hand selected for their honey notes and nutty intensity.

24 botanicals are carefully chosen for their uniquity , that work together in unison to afford a romantic , complex flavour. Fresh floral and clarifying citrus notes are grounded by earthy and spicy cassia bark and cubeb , and a smooth finish is achieved with the help of local honey.

The folks behind the marvellous Ancho Reyes Chile Liqueur have only gone and create a green chile variant! The use of green chili brings and earthier, more vegetal spiciness to the flavour profile (compared the to sweetness/spice juxtaposition of the original recipe), which lends itself to being used in gin-based cocktails as well as tequila and mezcal-based tipples.

A 12 year old dark rum from Ron Abuelo of Panama. They age their rum in whiskey barrels, which adds a distinct vanilla sweetness. This 12 year old was launched in 2009, and is elegant, slightly smoky and rich. It was awarded a Gold at the 2009 Ministry of Rum Tasting Competition.
