By drawing on the best techniques used to make cognac and its great blends, Etienne Dupont has studied, tried out and refined his cellar work to reach the same levels of elegance and expressiveness as found in the best wines.

A unique Spanish brandy with strong notes of grapes and raisins, Cardenal Mendoza Solera has a syrupy texture, is sweet on the palate and has a flavour profile which builds and builds. From the sweet aroma of plums and liquorice, with a light touch of espresso coffee, Cardenal Mendoza Solera has a flavour which combines these distinct flavours with additional hints of caramel to balance the bittersweet coffee notes. With honey sweetness in abundance Hine Rare VSOP is a refined blend of eaux de vie which balances selections from both the Grande and Petite Champaign regions. Made from 100% holandas spirits and aged using the traditional Criaderas y Solera system. Lepanto Solera Gran Reserva Pedro Ximenez is then aged for at least 15 years in American oak barrels; 12 in barrels previously holding Tio Pepe and three in barrels holding Noe, a 30 year old Pedro Ximenez.

A bottle of Calvados containing a 'captive apple'. Each carafe is suspended from the branches of apple trees in the springtime before the first apples appear. The apple then grows inside the carafe. When the fruit becomes ripe, the carafe is removed from the tree with the apple captive inside. The bottles are then filled with young Calvados at 70% which allows the apples to settle down and stabilise before they are refilled with Calvados. The apples inside the bottles then gently macerates inside the Calvados filled bottles. The visually-attractive bottles make excellent gifts. Best consumed as a digestif and enjoyed at room temperature.

Père Magloire 12 year old AOC is a single distillation Calvados which is fine and silky on the palate. Its deep golden brown colour is attributed to a minimum of 12 years maturation in oak barrels and this also adds a distinct addition to the flavour profile of the bottle. Fresh hazelnut marries with fruity banana and natural spices all coming together with the baked apple flavour which is typical of a quality Calvados.
