Green Island Spiced, 70cl

Another exceptional rum from one of Mauritius’ finest producers Green Island, Green Island Light is a highly drinkable and wonderfully subtle offering. Grassy and herbaceous on the nose, hints of pepper and sweet honey also come through tempting you to taste it. The flavour is surprisingly creamy for a white rum and has distinct notes of exotic coconut, bitter cocoa and golden syrup, as well as sharp lime and black pepper. It’s this final note than lingers once the drink is done.

An 80:20 blend of pot still to column still rums is used to deliver the quality taste of Diplomatico Reserva Exclusiva. Aged for up to 12 years this exclusive rum is a heady concoction with sandalwood and fresh leather aromas that lead to a deep and bitter flavour. The bitterness comes through in deep coffee notes but they are matched by sweet honey and plum flavours which add a lightness to this intense rum.

El Jimador Reposado is made from mature blue agave and spends two months resting in American oak barrels. Golden hues escape from the bottle thanks to this process and the flavour mellow yet rich with toasted agave at the forefront. Almond, vanilla and baking spices create an aroma to draw you in and then they also prop up the agave flavour with additional sweetness. Smokiness comes through at the end and is a welcome addition to the sweetness.

A classic Speyside offering, Glenfiddich’s 12 Year Old blend spends time in both American and European oak casks, developing a truly distinguished flavour. Four Pillars Rare Dry Gin is made in a small distillery in Yarra Valley, Australia. Everything the Four Pillars distillers make is based around their four pillars - the still, the water, the botanicals and love. It's sort of a bit like the four elements of hip hop. Pillar 1 - The Four Pillars copper-pot still is called Wilma. Pillar 2 - The water they use from Yarra Valley is triple filtered. Pillar 3 - They use some local botanicals (Tasmanian pepperberry, lemon myrtle), some exotic botanicals (cinnamon, cardamom, coriander seeds and star anise) and some classic botanicals (juniper, lavender, angelica root), as well as whole oranges to give Four Pillars Gin its flavour profile. Pillar 4 - The distillers love what they do and love what they have made. It all adds up to a vibrant Australian gin which stands out in cocktails, but tastes just superb neat.
