The grapes were harvested by hand and placed into small cases of 12 Kg for careful transport to the winery where they undergo a cold pre‐fermentation maceration for 48 h followed by controlled alcoholic fermentation at 28º C and back‐fermentation. They then undergo lees maceration for 18 ‐ 20 days followed by racking and tasting.

A pure fruit driven nose, perfumed with cut limes and a hint of spirit. The wine has a perfumed honeyed palate and is intensely fruity with white peach flavours and mineral complexity. Grapes are sourced from selected prime vineyards and harvesting is by hand or machine, depending on the site. Winemaking is ‘traditional’ and overseen by Jean Michel Lihrmann – pneumatic pressing, temperature controlled fermentation, no finings and light filtration before bottling – all to preserve fruit and aromatic qualities and elegance. His philosophy is to make wines with good acidity and fruit balance.

Many critics score this McLaren Vale wine highly.
Critic tasting note: Still a medium hued crimson colour, no whole bunches here, nine months in older French oak. Spicier than the previous wines, a little meatier in terms of its aromas. Mouthfilling and ripe fruit, really quite tangy, there's a plummy quality, but a rasp of tannin and souring acidity that gives some grip and real gastronomic appeal." - 91/100, Tom Cannavan

At Cortese, we produce wine in the most traditional and natural way to reflect the true character of the estate’s terroir and its grape varieties. Taking tradition as our inspiration, we started to employ ancient wine-making techniques such as fermentation in terracotta. The resulting wines reflect the combination of modern technology and traditional techniques, with every nuance of the terroir showing through.
The wines are fermented on the skins at a controlled temperature of between 17 and 19 °C. The Inzolia is macerated for 2-3 weeks, Zibibbo for 6 weeks with daily, gentle punching down during the 7-10 days of fermentation.
Once the fermentation if finished the wines are then blended together and left on fine lees for about 3 months before bottling.
A highly versatile wine, it can only be consumed as an aperitif and is perfect in combination with fish dishes with oriental scents and pasta.

VEGETARIAN...VEGAN..
A classicstyle of Sauternes. A perfect way to finish a meal. A nose of citurs fruits with died fruit on the palate. Both rich and smooth in the mouth with a lasting sweet finish.
The island of Pantelleria is a curious, rugged volcanic outcrop, situated halfway between the Tunisian and Sicilian coasts, and it is here, in Italy's most southerly appellation, that this Passito Liquoroso is made. It's rather amazing, we think, that this beautiful, rich, baked apricot and marmalade-y dessert wine is made roughly 40 miles off the coast of Africa. But, being an island in a rather windy spot, it gets enough cooling maritime influence to balance the searing sun, resulting in a nuanced, balanced, but still brilliantly swarthy wine.
A beautiful amber colour with a prominent nose of apricot jam. The palate is rich and ripe with sweet velvety texture and flavours of dried fruits, apricots, figs, raisins. The finish has a lick of citrus to keep it fresh.
Deep ruby in the glass, this cabernetSauvignon commands attention from the moment it is poured. Rich, luscious scents of sweet berry fruits entice the nose, opening to wisps of cola, licorice and spice. An intense core of ripe blackberry and boysenberry greets the palate, giving way to notes of cassis, vanilla and earth. Firm tannins and food-friendly acidity balance the plush fruit, leading to a long, pleasant finish.
The intense character and complex nature of this Cabernet Sauvignon is a strong partner for meat dishes such as beef stew and roasted venison. Try it also with a flavourful starter, such as gorgonzola and walnuts, or a simple dessert, like espresso gelato.
This beautiful salmon-pink Provence rosé has a very pretty scent of crushed strawberries, peach, rose-water and orange blossom. On the palate, it is wonderfully dry and crisp with delicate summer berry fruits balanced by citrus zest acidity and a deliciously creamy finish. A fabulously sophisticated rosé that is perfect for summer picnics or evening aperitif.
Aromas of leather and forest floor greet the nose and are enhanced by dark cherry, plum and vanilla oak. The palate has elegant fine-grained tannins and an incredible texture that supports a lovely earthy, truffle-like complexity. A perfect balance of fruit and oak in a complex, weighty style.
