Four Pillars Rare Dry Gin is made in a small distillery in Yarra Valley, Australia. Everything the Four Pillars distillers make is based around their four pillars - the still, the water, the botanicals and love. It's sort of a bit like the four elements of hip hop. Pillar 1 - The Four Pillars copper-pot still is called Wilma. Pillar 2 - The water they use from Yarra Valley is triple filtered. Pillar 3 - They use some local botanicals (Tasmanian pepperberry, lemon myrtle), some exotic botanicals (cinnamon, cardamom, coriander seeds and star anise) and some classic botanicals (juniper, lavender, angelica root), as well as whole oranges to give Four Pillars Gin its flavour profile. The Kyoto Distillery, the city's first dedicated gin maker, has fast become recognised for its fastidious attention to detail. Eden Mill Golf Gin 70cl is a special edition gin for St. Andrews Golf Company who evoke bygone days with their hickory shafted clubs. An exciting and unusual gin from Islay whisky distillery Bruichladdich, The Botanist is made in a Lomond still christened Ugly Betty and contains no fewer than 31 botanicals, of which 22 are native to the Southern Hebridean island itself. The latter include the likes of mugwort, meadowsweet and the enigmatic Lady's Bedstraw flowers, and the resultant dry gin is described, perhaps unsurprisingly, as 'floral'.

Variorum Gin, a smooth and colourful elixir: fresh strawberry and floral chamomile lead on a wave of soft juniper with a suggestion of citrus. The off-sweet palate has fruit bursting at the front before a gentle vanilla spice emerges giving a luxurious creamy feel. Strawberries and cream give way to a subtle floral tone on the finish with a pronounced tang of grapefruit.

MEGA YUM!  Sipsmith boys came up trumps with this one. Super silky mouthfeel with notes of lemon barley water and crushed up breakfast cereal from your schooldays. This is followed by a cramy vanilla moment before more lemon and eventually a brief hard boiled barley sugar with orange rind. Finish is meag silky and leaves you with a lovely lemon barley note and a desire for more of the same.
