 A truly exceptional Guatamalan rum, Zacapa Centenario XO is a premium offering which doesn’t disappoint when it comes to flavour. Beautifully delicate, the flavour of Zacapa Centenario XO is matured in a mix of bourbon and sherry casks which together deliver a flavour which is exceptionally sweet and sugary, without being sickly. The softness on the palate of this mature rum is surprising and very welcome, with only a hint of smoke coming through in the finish.

Interestingly, now that industry giants Diageo are distributing Zacapa, the '23 years old' age statement has suddenly been dropped and replaced with a somewhat more plausible claim – the rums used are aged between 6 and 23 years old and are blended together in a solera.

Fabrica de Tequilas produced and distilled this blanco Tequila using agave cooked for 10 hours in steam-powered autoclaves. After the addition of special yeast, the batch was then fermented and moved into stainless steel pots for double distillation. To blend this blanco, Rooster Rojo used water filtered through Mexican silver, creating its sumptuously smooth profile.

With a history dating back 6,000 years, the Fenjiu Distillery still follows the ancient methods, using organic sorghum, water drawn from the Gouzhuang spring 840 metres below the nearby forest, double fermentation, double distillation with cornhusks added to the fermented grain, and long maturation periods in ceramic pots. The grain culture used to start the fermentation process is a combination of barley, peas and water, formed into bricks and left to develop in warm, humid conditions for up to two months until they grow yeasts, fungi and microorganisms. Fenjiu is matured in ceramic jars for between five and 30 years before blending and bottling. These breathable containers allow micro-oxygenation of the spirit and remove impurities, all without adding flavour. The creation of master blender Alex Thomas, The Sexton Single Malt Irish whiskey is made from 100% Irish malted barley, triple distilled in copper pot stills. While Canadian whisky is often a showcase of different grains, Signal Hill focuses instead on casks. The distillery takes corn and malt spirit and ages them in three types of cask – ex-bourbon, ex-Canadian whisky and new oak. The three casks bring out different aspects of the whisky's character – vanilla and toffee notes, sweet grain and oaky spice respectively – creating a flavoursome and well-balanced whisky.

The clue’s in the name – Very Junipery Over Proof, Sipsmith’s have created a juniper lover’s dream. This is followed by a creamy vanilla moment before more lemon and eventually a brief hard boiled barley sugar with orange rind. Finish is  silky and leaves you with a lovely lemon barley note and a desire for more of the same.

Full bodied and packed with deep brown sugar notes, Skipper is a molasses-based rum which brings together seven different individual rums. Its deep mahogany hues hides a brawny, bittersweet flavour which is burnt on the palate and features crème brulee notes. Raisins, vanilla and hot clove spice come through strongly and it has a real strength of character which helps it stand out and gives it all the characteristics of a quality navy-style rum.

One of the rare 100% pot still rums out there, Smith & Cross is a Jamaican favourite which allows tropical fruity flavours to define its character. A hit of pineapple is your first hint at the flavours within and the nose develops with further spicier notes of clove, pepper and intriguing hot chilli. On tasting you’ll enjoy a warm, buttery opening which bursts into a fiery chilli-based heat, peppered with cinnamon and clove. This heat is tempered by balancing vanilla and muscovado sugar notes, bringing Smith & Cross to a mellower end note.

St Aubin Rhum Agricole comes from Mauritius, and is made by distilling fresh sugar cane juice in the French method. St Aubin itself has been in the business of sugar production since 1819, and started to distil it quite recently. This particular spirit is unaged and clean, crisp and tangy.

The Salted Caramel Rum Liqueur is produced from column distilled pure sugar cane juice and reduced to 35% before being blended with natural flavours and a touch of sugar for balance. On the nose, you have a very pleasant popcorn aroma and sweetness coming through while on the palate, you can taste the creamy salted caramel. Stock 84 is a Czech-made brandy that was originally produced in the beautiful town of Trieste in north east Italy. Obtaining its name from the year it was created (1884), the brand is known for being mellow and smooth.

Sweet layers of tart raspberry move into chalky yet sweet notes of rasberry lemonade. The kick is tart and zingy and is rescued by a big raspberry and blueberry finish. Mouth is semi-full.

Melted caramel and peanuts upon entry followed by waves of sweet chocolate. Caramel takes over mid palette and moves into peanut brittle and palm sugar notes. The kick is super smooth and the finish is a mixture of snickers and hard candy with a faint lick of rock salt. Yum stuff!

Baked vanilla and lemon cake gives way to sweet waves of lemonade and cornish ice cream. A lemon undertone remains a constant and saves it from being overly sweet. The kick is pretty silky and the finish is full of cloudy lemonade and crème anglaise. Yum!

A powerful shooter like no other Stroh 80 is an intense and fiery rum which Austria is very proud of. It’s often enjoyed atop sweet desserts and as an additional kick to a comforting hot chocolate. Suntory are the gods of the Japanese whisky scene and their Hakushu line is amongst the most popular. The Hakushi distillery is hidden in the forests near the Japanese Alps and this particular offering is aged for 12 years. An exceptional single malt, Hakushu 12 year is a light and refreshing offering with hay and mixed peels on the nose and gentle barley malt, smokiness and hazelnut coming through in the taste. Sweetness is perfectly balanced against spice.

Stormy by name, stormy by nature Talisker Storm is a youthful whisky which has the characteristics of the Talisker distillery as well as smoky notes and an interestingly complex flavour profile. An initially briny nose leads into banana, citrus and white pepper notes. This multi-faceted nose leads into a similar palate, with additional wood smoke and biting chilli heat. It ends on a dry note, satisfying and welcome.

Named for the distillery’s number 10 still, Tanqueray No. 10 gin is based upon their classic recipe with some exciting additions. Enjoy the depth of flavour added by additional camomile and fresh grapefruit, lightening the nature of the gin and adding a refreshing edge. With almost sherbet undertones, No.10 has a rounded palate which combines floral juniper with the citrus notes and additional spice from coriander and white pepper. The new flavours create a sweetness which is very welcome and wonderful when mixers are added.
