KEFALONIA.....A bone-dry and intriguing wine with a heady mix of iodine, peaty aromas, exotic fresh fruit, melon and dried pear. Mouth-wateringly fresh on the palate with plenty of tension on the long finish. Vinified following a philosophy of minimal intervention. A cool pre-fermentation maceration lasted for eight to 10 hours to extract aromas and flavours. The free run musts and pressed musts were fermented separately with wild yeasts at controlled temperatures before spending one month on the fine lees with periodical stirring to impart texture and complexity. The wine was gently filtered prior to being bottled. The bottle was then submerged UNDER FRESH WATER, in special tanks in the winery. This new method of maturation promotes constant temperatures, darkness and lack of oxygen, resulting in an aromatic wine, with a pure fruit character. 91 points Robert Parker

Marsala is made on the Italian island of Sicily, around the coastal town of Marsala. It is made from the local grape varieties Catarratto, Grillo and Inzolia, fermented to dryness like sherry, then fortified. LABELS MAY VARY.

The island of Pantelleria is a curious, rugged volcanic outcrop, situated halfway between the Tunisian and Sicilian coasts, and it is here, in Italy's most southerly appellation, that this Passito Liquoroso is made. It's rather amazing, we think, that this beautiful, rich, baked apricot and marmalade-y dessert wine is made roughly 40 miles off the coast of Africa. But, being an island in a rather windy spot, it gets enough cooling maritime influence to balance the searing sun, resulting in a nuanced, balanced, but still brilliantly swarthy wine.

The traditional Malat winery has been making wines in the region since 1722. A favourite among sommeliers and wine enthusiasts alike, Grüner Veltliner is the most important grape of Austria and is known for its spicy, herbal and fruity aromas and a crisp, fresh acidity. This Gruner has notes of whole grain cookies, dried barley, hazelnut flour, and baking spices lead the aromas and flavours on the forefront, followed by tart lemon and spice. Its soft texture yet zippy acidity add up to a wine that’s entirely enjoyable. A white wine that goes remarkably well with a great many dishes. NOTE. 3 RANDOM LABEL DESIGNS.

This orange wine brings together Inzolia and Zibibbo organic grapes to create a delicious, fruity and fresh wine. The wine gets its orange colour from contact with the grape skins. At Cortese, we produce wine in the most traditional and natural way to reflect the true character of the estate’s terroir and its grape varieties. Taking tradition as our inspiration, we started to employ ancient wine-making techniques such as fermentation in terracotta. The resulting wines reflect the combination of modern technology and traditional techniques, with every nuance of the terroir showing through. The wines are fermented on the skins at a controlled temperature of between 17 and 19 °C. The Inzolia is macerated for 2-3 weeks, Zibibbo for 6 weeks with daily, gentle punching down during the 7-10 days of fermentation. Once the fermentation if finished the wines are then blended together and left on fine lees for about 3 months before bottling. A highly versatile wine, it can only be consumed as an aperitif and is perfect in combination with fish dishes with oriental scents and pasta.

This is a fabulous Talbot to drink over the next 20-25 years

Chateau Sigognac Medoc is an acclaimed Medoc produced from a skilful blend of Cabernet Sauvignon, Cabernet Franc and Merlot. Great with many years left of course. Drank in Galway in Ireland where Kirwan were one of the 12 tribal families of the city before later making wine. Mature and elegant, captivating more than fruit delivery. The nose is mature, complex and characterful, floral elements, not surprising of course from this great Margaux. Nose has aged Margaux'ness, berries, red fruit, toasted expresso, mint tinges and layers of wood and wonderfulness.

Ageing in French oak barrels (20%) for 12 months adds spice and structure and the wine finishes with a fresh cherry note and light tannins, making you want another sip. "Vines planted in 1998 in the north-facing Kali Vrysi vineyard at 4,000 vines per ha and an elevation of 200–300 m. Picked 24 September at a yield of 36 hl/ha. Fermented in tank with malolactic conversion and ageing for 12 months in oak barrels (20% new).
