Your ancestors may even have heard of this one, Mount Gay is one of the world’s oldest rums, dating back to the 18th century. Pure Barbadian spring water and sugar cane are blended to create the trademark flavour, the recipe still the same as when first created. Notes of apricot and banana burst from the bottle and there’s a subtle smokiness that comes from the Kentucky bourbon barrels the rum is aged in.

Released in the UK in 2014, the Mount Gay Black Barrel rum is made from single column and double pot distilled rum, though using a higher proportion of double pot distillates than their other expressions. It is also finished in heavily charred bourbon barrels before being bottled.

Ron Matusalem went and sourced some wine casks for this limited edition release! The rum is charcoal filtered and matured in a solera system, before it's finished in casks which previously held Tempranillo wine. The tropical notes from the rum work wonderfully with the spicier notes from the wine cask, with just 8,000 bottles released. Rather snazzy bottle there, too.

A young Havana Club offering, this 7 year old Cuban rum gets its amber hues from the bourbon casks it’s matured in. Gosling Black Seal 151 is a full-flavoured dark rum that has the additional benefit of oak barrels which have been used to age bourbon. It stands out against other rums of the region because of its caramelised flavour and the bourbon notes that the oak casks offer. The taste of treacle melds with spicy cinnamon and orange zest to create a depth of flavour which is both inviting and demands another taste. Recognisable from the Blue Hyacinth Macaw on its bottle, Doorly’s fine Old Barbados Rum is an extra special creation. Doorly’s XO is a sweet concoction of heady aromas and enticing flavours including notes of Oloroso Sherry thanks to the casks the spirit is matured in. Oak spices are prevalent in the flavour and support the sweet vanilla and marzipan notes which deliver a tart spiciness which is enjoyable again and again. Soft and fruity with sweet vanilla and toasty oak, this is a versatile rum which is delicious served neat, but also great as a base for cocktails or mixing in long drinks- try with a dry ginger ale and a wedge of lime!
