The second release in Jameson Caskmates range, finished this time in casks that once held zesty IPA. From the Domus range comes another intriguing Grappa - this time, the spirit is made using the Nebbiolo grape and has been matured to help develop its flavour profile. Nebbiolo grape are the core of all brilliant Barolo wines, but do they make great Grappa? Absolutely! Roasted apricot, walnut, dry cinnamon, juicy prune and a touch of brandied cherry.

Appleton Estate 8 Year Rum blends together 20 different rums to create a dark sugar concoction which is intensely enjoyable. The sugary nature of this Appleton offering is tempered by warm honey and despite the seeming sweetness it is sharp on the tongue with a satisfying hit of citrus peel and caramelised apple. Caramel and hazelnut flavours come through on tasting and this one rum that should be enjoyed neat.

The Maritime Gin is an infusion of botanicals with 5 different types of seaweed, all locally sourced. Some of the botanicals are dried and others blast chilled, with the more delicate placed in Méabh’s vapour tray. Some of the ingredients are so unusual, harvesting can only take place when there is a full moon, with the foraging at times extremely hazardous, as the tide means everything.

While Canadian whisky is often a showcase of different grains, Signal Hill focuses instead on casks. The distillery takes corn and malt spirit and ages them in three types of cask – ex-bourbon, ex-Canadian whisky and new oak. The three casks bring out different aspects of the whisky's character – vanilla and toffee notes, sweet grain and oaky spice respectively – creating a flavoursome and well-balanced whisky.

The rum base is an aged Caribbean rum previously used to season empty whisky casks for final maturation. An extract of Banana Peel is infused into the rum to impart a fruity forward note to the spicy, sweet toffee profile of the Rum. It’s like liquid Banana Bread. Best served neat over ice, shaken in a Daiquiri or mixed long with Ginger Ale.

The Cotswolds Distillery in Stourton is up and running - hooray! This is their Cotswolds Dry Gin, made with juniper, coriander and angelica root macerated in their pure wheat spirit for 24 hours. Following this, they add a botanical selection including bay leaf, grapefruit, lime, black pepper, cardamom seed and Cotswolds lavender to their carter head still for distillation. To bring it down to bottling strength, a robust 46% ABV, they use naturally refined Cotswolds water.

Doorly’s 5yo is a blend of rich pot still and elegant column distilled rums which are aged for at least 5 years in ex-American whiskey casks. Soft and fruity with sweet vanilla and toasty oak, this is a versatile rum which is delicious served neat, but also great as a base for cocktails or mixing in long drinks- try with a dry ginger ale and a wedge of lime!
