Infinita represents the culmination of whisky maker Dr. Bill Lumsden's explorations across various styles, highlighting the diverse array of flavours found in Glenmorangie’s warehouses. Initially matured in American white oak bourbon barrels, before a portion is moved to Oloroso sherry barrels for further years of maturation, while the remaining portion continued its aging in the bourbon barrels. After completing the 18-year maturation process, the two portions were merged and bottled at a strength of 43% ABV. A lovely drop here from Glencadam Distillery, made by treating its Highland single malt Scotch whisky to a finish in Pinot Noir Wine casks. The whisky was initially aged in bourbon barrels before it was given a second maturation in barrels sourced from the Burgundy region of France.
Here we have a sherried single malt whisky from Glencadam distillery. It was first matured in Bourbon barrels before being transferred to quality Pedro Ximénez casks. In the Highland distillery's dunnage warehouses, this rich and sweet PX sherry has added layers of dried fruit and baking spice to malt. It was bottled without chill-filtration or any additional colouring.
Glencadam single malt Scotch Whisky here that was treated to a finish in Merlot wine casks. Master distiller Robert Fleming married several select single malts aged in bourbon American oak casks from Glencadam's historic dunnage warehouses and then finished them in Merlot wine barrels sourced from Bordeaux, France. It was bottled at 46% ABV, natural colour and un-chill-filtered.
The Glencadam 25 year old is limited to 1,030 bottles, this is a rich and complex whisky with notes of tropical fruit, nuts, ginger and pepper - aptly named 'The Remarkable'.

A vibrant, fruity new make grain spirit from Monkey Shoulder, Fresh Monkey is a combination of unaged grain and single malt spirit that were blended and bottled fresh off the still for a bold and well-balanced character. Aromas of fresh pears, tropical fruits, vanilla, sweet malt and boiled sweets fill the nose, complemented by notes of pink bubble gum, pineapple, mango, pear, malt and bonfire embers throughout the palate and lingering in the finish.
Recognisable from the Blue Hyacinth Macaw on its bottle, Doorly’s fine Old Barbados Rum is an extra special creation. Pillar 1 - The Four Pillars copper-pot still is called Wilma. Pillar 2 - The water they use from Yarra Valley is triple filtered. Pillar 3 - They use some local botanicals (Tasmanian pepperberry, lemon myrtle), some exotic botanicals (cinnamon, cardamom, coriander seeds and star anise) and some classic botanicals (juniper, lavender, angelica root), as well as whole oranges to give Four Pillars Gin its flavour profile. Pillar 4 - The distillers love what they do and love what they have made. It all adds up to a vibrant Australian gin which stands out in cocktails, but tastes just superb neat.
